Since I’ve been on a special diet lately, (for health reasons) I’ve been playing around with recipes. This is a pancake recipe I’ve been making lately and it’s been given a thumbs up by my family so I thought I’d share it with you! It’s gluten free, vegan and sugar free. I hope you like it!
Pancake Recipe
1 cup gluten free flour blend
1/2 cup almond flour
1 tsp baking powder
1/2 cup gf oats
1 tsp salt
1 Tbsp coconut sugar
1 1/2 cup almond milk
1 flax egg (1 Tbsp ground flax + 3 Tbsp water)
3 Tbsp coconut oil softened
Mix wet ingredients together and whisk dry ingredients together separately. Then combine both and mix well. Add mashed banana, blueberries or chocolate chips if desired. Fry pancakes in butter or coconut oil until dark brown. Enjoy!
